Historie Mit zehn Jahren begann ich, für meine Familie einfache Mittagessen zuzubereiten. Der Ehrgeiz, neue Gerichte auszuprobieren, führte mich dazu, mit 16 Jahren eine kleine Gastronomie Ausbildung zu machen (Grundkurs), da ich erst mit 17 in der Gastronomie eintreten durfte! Dort lernte ich viel über Weinkunde, verschiedene Zubereitungsarten und das Flambieren am Tisch.... Meine Leidenschaft für das Kochen, inspiriert durch mein Opa Fritz Schmidt der nach dem Zweiten Weltkrieg unter dem Amerikanern im europäischen Hof Küchenchef war. Der Ehrgeiz packte mich, und ich kämpfte darum, meine Ausbildung auch im Europäischen Hof Heidelberg zu absolvieren. Das war auch gar nicht so einfach, denn von der Schule aus hätte ich in einer Bahnhofsgaststätte meine Ausbildung absolvieren sollen. Durch ein vorsprechen beim europäischen Hof habe ich es dann doch letztendlich geschafft, meine Ausbildung dort zu absolvieren. Diese Erfahrungen, die mich heute noch prägen.
